1/2 cup butter, melted and cooled
2 eggs, lightly beaten
3 cups sifted flour
2 packages active dry yeast
1/2 cup warm water
1 cup warm milk
1/4 cup sugar
1 tsp. salt
Vegetable oil
1 cup honey
Ground Cinnamon

In a bowl, sprinkle yeast over warm water and let stand for 5 minutes. Pour milk into a large bowl. Add sugar and salt. Stir in yeast mixture and eggs. Add butter and beat well. Slowly add flour, beating continuously. Batter should be smooth, sticky and thick. Add flour as needed for correct consistency.

Cover bowl with a clean towel. Let dough rise in a warm place until doubled in bulk (2-3 hours).

In a deep saucepan, pour oil to a depth of 3 or 4 inches and heat to 360º. While oil is heating, pour honey into a small saucepan and place over very low heat to warm.

Stir batter well. Drop a tablespoon of batter into hot oil and fry. Turn constantly until batter puffs and is golden brown on all sides (about 2 minutes).

Remove with a slotted spoon and place on absorbent paper. Arrange Loukamades on a platter, drizzle with warmed honey and dust with ground cinnamon. Stack Loukamades until all the puffs are layered and dressed.

Serve at once. Makes about 36 puffs.
