1 large onion, chopped
3 – 4 celery stalks, chopped fine
1 clove garlic
vegetable oil
1 lb hamburger
2 small cans tomato sauce
2 small cans tomato paste
1 tsp poultry seasoning
˝ tsp cinnamon
2 tsp oregano flakes
1 12-oz box jumbo shells
1 16-oz tub ricotta cheese
2 eggs beaten
3 cups shredded mozzarella cheese, divided
˝ cup Parmesan cheese
1 tsp parsley flakes
˝ tsp seasoned salt
˝ tsp pepper

Directions:
To make sauce: sauté onions, celery, garlic in oil, add hamburger. When hamburger cooked, drain off fat, add tomato sauce and paste. Add 2 cans (from tomato paste cans) of water. Add poultry seasoning, cinnamon, oregano, salt and pepper (to taste). Add one cup water. Simmer 3 – 5 hours (do not boil). Add water as necessary.

To make shells: cook shells as directed on package. In medium bowl, blend ricotta cheese and eggs. Add 2 cups mozzarella cheese, Parmesan cheese, parsley, salt and pepper. Fill shells evenly with mixture.

To assemble: Pour some sauce in bottom of greased 13-in x 9-in x 2-in pan; add filled shells; spoon remaining sauce over shells; top with remaining cheese. Bake at 350* for 30 minutes (or until heated through).

This is a combination of my Great Aunt Muriel's lasagna recipe (her sauce) and a recipe for stuffed shells that I found. When living in Denver, I wanted to make something special for Ken when he came to visit! Found a recipe for Stuffed Shells! It was a hit. Unfortunately, I lost the original recipe, so I improvised to this one!
