2 4-6 oz fish fillets (snapper, salmon, tilapia, haddock etc)

2 tsp Dijon mustard
salt and pepper

2T panko breadcrumbs
2T freshly grated parmesan cheese
4 tsp olive oil

Directions:
Directions:
Brush bottom of baking dish or foil with olive or vegetable oil.

Place fillet(s) on top of oil. Brush fillets with generous amount of Dijon mustard and sprinkle with salt and pepper.

Combine 1T panko breadcrumbs, 1T freshly grated parmesan cheese and 2 tsp olive oil PER fillet.

Top each fillet with thick coat of crumb mixture.

Bake at 350 degrees for about 20 minutes until fish is flaky and coating is lightly browned.

*(Can use any flaky white fish).
