4 lbs. tripe
1/4 c. lemon juice
6 Tbsp. Menudo spice mix (Fiesta Brand)
1 package Menudo Topping (Fiesta Brand)
1 Tbsp. garlic, minced (or more to taste)
3 bay leaves
4 cans of hominy, rinsed & drained

Directions:
Directions:
Cut tripe into bit size pieces, remove excessively fatty pieces as desired.
Boil tripe with lemon juice, garlic& bay leaves for about 1 hour, removing excess fat from water surface with spoon.
Add spices & mixes, continue boiling for 2 hours, maintaining adequate water level as required.
Add hominy and continue boiling for 1 hour for a total cooking time of approx 4 hours.
For the best flavor cook ahead of time and let cool overnight and reheat before serving.

Garnish: chopped cilantro, chopped onion, lemon juice

Serve with corn or flour tortillas
