1 Large Purple Eggplant
Italian Bread Crumbs
Romano or Parmesan Cheese
Olive Salad Mix

Directions:
Directions:
Line a large cookie sheet with foil and coat foil with olive oil.
Slice the eggplant in 1/2" rounds and place on the foil. Bake at 350º for 15 minutes. Turn over and put a coating of bread crumbs on each slice. Put 1 teaspoon of olive salad on each slice in a rounded mound in center of each. Put another layer of the bread crumbs on top of the olive salad and them liberally sprinkle with grated cheese.
Return the sheet to the oven and bake at 375º for another 15 minutes or until they are golden brown and the cheese is melted. To make this an appetizer, use a slim elongated eggplant for smaller slices,
