1/2 cup unsulfured molasses
1/2 cup butter, softened
1 1/4 cups sifted cake flour
3 Tbsp. brandy
1/4 tsp. salt
2/3 cup sugar
1 Tbsp. ground ginger

Directions:
Directions:
Preheat oven to 300º. In saucepan, heat molasses to boiling. Add butter and stir until melted. Add the rest of the ingredients gradually EXCEPT the brandy. Stir. Add brandy last and stir until well mixed. Drop by measuring half teaspoons 3" apart on greased cookie sheet, baking 6 at a time. Bake 10 minutes. Cool 1 minute, then remove with a spatula and roll at once around handle of wooden spoon. (If removed too soon, wafer will shrink together - if not soon enough, it will be too brittle) If it is too brittle, put back in the oven for a few minutes to soften. Store in airtight containers.
