Oven Fried Fish Recipe

2 c panko crumbs
2 Tabs melted butter
2 Tabs parsley chopped
1 shallot minced
1/2 c flour plus 1 Tabs
2 large eggs
3 Tabs mayonnaise
2 TSR prepared horseradish
1/2 TSR paprika
1/4 TSR cayenne pepper
1 1/4 lb skinless fish, like halibut

1. Adjust over rack to middle position and heat over to 350º. Blend crumbs, melted butter, salt, pepper. Transfer to baking sheet and bake until deep golden brown and dry, about 10-15 minutes, stir twice during baking. Let cool completely, add parsley and shallot.
2. Increase over to 425º.
3. Place 1/4 c flour in second shallow dish. In third shallow dish, whisk together eggs; mayonnaise; horseradish, if using; paprika; cayenne, if using and 1/4 TSR pepper until combined. Whisk in remaining 1/4 cup plus 1 Tbsp flour until smooth.
4. Spray wire rack with vegetable oil spray and place in rimmed baking sheet. Pat fish dry with paper towels and season with salt and pepper. Dredge 1 fillet in flour and shake off excess. Using tongs, dip fillet in egg mixture, then coat with bread-crumb mix, pressing gently so that thick layer crumbs, adheres to fillet. Transfer breaded fillet to prepared wire rack. Repeat with remaining 3 fillets.
5. Bake until fish flakes apart when gently prodded with paring knife and registers 140 degrees, 18-25 minutes. Using thin spatula, transfer fillets to plates and serve immediately with lemon wedges.
