4 cups cold leftover mashed potatoes
1/4 cup all purpose flour
2 tablespoons chopped green onion
2 tablespoons chopped red bell pepper
1/2 cup grated Cheddar or Parmesan cheese
1 egg beaten lightly

Directions:

Coat waffle iron with cooking spray then preheat iron. Combine potatoes and all other
ingredients. Mix well. Spoon about 1/4 cup of mixture onto the center of the waffle iron
and cook till golden brown. Repeat.
