3 eggs, separated
1 large can whole corn
3/4 tsp. salt
1/8 tsp. pepper
1/4 c. flour
3 T. milk
1/2 tsp. baking powder
oil for frying

Directions:
Directions:
Combine the egg yolks, corn, salt, pepper, flour, milk, and baking powder. Beat the egg whites until stiff and gently fold into the fritter batter. In a wok or deep pan, heat the oil over medium to medium-high. Drop the batter into the hot oil by the tablespoon. Fry until golden brown and drain over a paper towel before serving.
