2 green peppers, medium diced
1 cup butter, melted
6 to 7 heaping tbsp. flour
1 qt. hot water
1 qt. hot chicken stock
1 pt. heavy cream
2 cups chicken, diced
2 lemons, juiced
salt
red pimentos (optional)
Directions:
Directions:
Sauté the green peppers in the melted butter until tender. Add the flour, mix well and simmer for 5 minutes. Slowly add the water, chicken stock and cream. Boil for 5 minutes or until thick. Add the diced chicken and lemon juice; mix well. Salt to taste. Top with diced red pimentos, if desired.

This recipe was from Chef Keith of the Hanger Restaurant where I worked as a waitress 40 years ago. He used to make this soup every Wednesday. People would line up at the door to make sure they got their "fix" before we ran out. If they only knew how much butter was in it...Chef Keith's secret and now ours to enjoy!
