1 cup butter, softened
3 tbsp. sugar
1 tsp. vanilla extract or 1/2 tsp. almond extract
2 cups sifted flour
1 can of Solo fruit pastry filling of your choice

Directions:
Directions:
In a large bowl, cream the butter and sugar; mix well. Add in the vanilla or almond extract. Stir in the flour; mix well. Roll the dough into small marble-size balls and put on parchment-lined cookie sheets. Make a small well in the center of each cookie with the back of a wooden spoon handle. Fill each one with the pastry filling of your choice. Bake in a preheated 350º oven for 12 minutes or until light brown. Do not over bake.

This recipe was given to me by my friend Ruth. She would make them for every OPWE bake sale, and I would buy almost all of them for my son Louis. One day she decided it would save me a lot of money if she just gave me the recipe. These cookies just melt in your mouth and are very addicting. Ask Louis, I'm sure he will give them an A+ rating!
