6 slices of bacon, cut into 1/2-inch pieces
1/2 cup cider vinegar
1/2 cup water
3 eggs
1 heaping tbsp. flour
5 heaping tbsp. sugar
1/2 tsp. dry mustard
1 tsp. salt
2 to 3 lbs. cooked potatoes, peeled and sliced
onion, sliced for garnish (optional)
dash of paprika

Fry the bacon in a heavy pan until crisp; remove from the heat. Mix the water and vinegar together and add to the bacon; set aside. In a bowl, beat the eggs until frothy. Add the flour, sugar, dry mustard and salt; beat until well-mixed. In a medium saucepan, heat the bacon-vinegar mixture until it is almost boiling. Slowly add the egg mixture, stirring constantly until it starts to boil and thicken. Remove from heat and pour over the potatoes; mix well. Top with sliced onions, if desired. Sprinkle with paprika. Refrigerate for at least 12 hours. Note: It always seems to taste better the next day.

This recipe originated from our grandmother Peters. We have never seen another recipe like it. It has always been one of our family's favorite potato salads.
