Ingredients: 1/2 lb. margarine, melted 6 eggs, beaten in a separate bowl 2 tbsp. lemon extract 2 tsp. vanilla extract (optional) 1 tsp. anise extract (optional) 4 cups flour, sifted 1 cup sugar 5 tsp. baking soda Frosting: 4 cups powdered sugar 1 tsp. ground lemon peel (optional) 1 tsp. vanilla extract 1 tsp. lemon extract 2 tbsp. lemon juice (optional) 1/2 cup water plus more if needed to make a thin consistency for coating the cookies

Directions:Melt the margarine; let cool. Add the 6 beaten eggs and your flavorings of choice. Mix dry ingredients in a large bowl. Make a well in the center. Add the wet ingredients slowly in the center of the well until a soft dough is formed. Add more flour if the dough is too sticky. Roll into ropes and form bows, knots or pretzel forms. Put them on a parchment-lined cookie sheets about 2 inches apart. Bake in a preheated 400º oven for around 15 minutes. Frosting: Mix all the ingredients together. When cooled, dip them into the bowl of frosting. Let cookies sit until dry. |
