Ingredients:
Ingredients:
1 cup golden raisins
1 cup water
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
2 eggs, beaten
¾ cup butter
1 cup sugar
1 teaspoon vanilla
1 cup walnuts, chopped (optional)

Directions:
Directions:
Step 1
Boil the water and then add the golden raisins to the boiling water. Remove from heat and cool. The raisins will absorb all of the water by the time it is cooled, making them soft and swollen.

Step 2
Sift the flour, baking soda, and baking powder in a bowl.

Step 3
In a large bowl, mix the eggs (that have already been beaten), butter, sugar, and vanilla until creamy. Add the flour mixture and mix until the cookie batter is completely mixed. Lastly, hand mix the raisins (and nuts if you choose) into the dough.

Bake at 350 degrees for 10-12 minutes.

Personal Notes:
Grandma would make these each year for Easter, I make them too for Easter, but I prefer them without the walnuts.
