Cream Puff:

½ cup butter or margarine
¼ tsp. salt
1 cup flour
4 large eggs

Chocolate Filling:
1 cup butter or margarine (softened)

6 eggs

Chocolate Glaze:
2 oz. semi-sweet chocolate
2 Tbsp. butter

Directions:
Cream Puff:
Grease and flour a 9” circle on a piece of aluminum foil and place the foil on a cookie sheet. Set aside. Combine water, butter, sugar, and salt in saucepan and bring to a boil. Add flour all at once, then beat with wooden spoon over low heat for one minute or until mixture leaves the sides of pan and forms a mixture that doesn’t separate. Remove from heat and beat about 2 minutes to cool mixture slightly. Add eggs one at a time, beating after each until the mixture has a satin like sheen. Drop the paste by 1/4 cupfuls just inside the circle so that it forms a ring. Continue around the ring until all of the paste is used. Bake in preheated oven (400º) for 20-40 minutes. Cool on a rack. Don’t be alarmed when the puff falls flat after it is removed from the oven. A few hours before serving, slice the ring crosswise with a serrated knife and gently lift off the top. Fill with the chocolate filling and replace the top. Drizzle with chocolate glaze. Chill until ready to serve.

Chocolate Filling:
Cream the butter and sugar until light and fluffy. Beat in the cooled chocolate and vanilla. Add eggs one at a time, beating 2 minutes after each. Chill in the refrigerator.

Chocolate Glaze:
Melt chocolate in microwave with butter (use 20 second intervals, stirring after each 20 seconds until chocolate is melted).
