4 boneless chicken breasts (to reduce fat remove skin)
¼ teaspoon salt
⅛ teaspoon pepper
1 can (16 ounce) sauerkraut (drained, I used bagged kraut, canned kraut tastes tinny)
4 slices Swiss cheese (reduced fat)
1¼ cup Thousand Island dressing (reduced fat)
1 tablespoon chopped parsley

Directions:
Directions:
Preheat oven to 325 degrees.
Place chicken in greased baking dish. Sprinkle with salt and pepper.
Place sauerkraut over chicken; top with Swiss cheese.
Pour dressing evenly over cheese. Cover with foil and bake in 325 degree oven about 1½ hrs. or until fork tender
Sprinkle with chopped parsley.
