Ingredients: 4 cups thin slice zucchini.....prefer with skin on 1/2 C chopped onion 1/4 C.margarine 2 tbsp. parsley flakes 1/2 tsp salt 1/2 tsp pepper 1/4 tsp. garlic powder 1/4 basil 1/4 tsp oregano 2 eggs (beaten) 8 oz. shredded mozzarella cheese 8oz pkg of crescent rolls 2 tsp yellow mustard (this is important)

Directions:Cook zucchini & onions in margarine on med. heat , 8-10 minutes just until tender---( do not overcook) Stir in next 6 ingredients. Stir cheese into beaten eggs and then slowly add to zucchini. Place crescent rolls into 10 inch pie pan & press to form a crust. Spread mustard on crescent crust (important). Pour zucchini & cheese mixture into crust & bake in preheated oven at 375 degrees for 18-20 mins. or until; crust looks brown. Pie will already be set up. |

Notes: For a different version--top pie before baking with thin sliced tomatoes---season with oregano, basil and salt--top with a scattering of shredded mozzarella cheese and bake. Makes it seem more like a pizza.
