1 med. eggplant,peeled and diced
11/4 c. cracker crumbs
1 1/4 sharp American cheese grated
2 eggs, slightly beaten
2 tbsp. parsley
2 tbsp. onion, sliced
2 tbsp. oil
1 clove garlic. minced
1/2 tsp salt

Cook eggplant covered until t4ender. Drain well and mash. Stir in crumbs. cheese. eggs. parsley. onion. garlic. salt and pepper. Shape into about 3 inch patties cook in oil about 3 mins.. per side or until golden brown.
