Ingredients: 1 tablespoon butter 1/4 cup chopped onion 1/4 cup chopped green pepper 1/4 cup chopped Canadian bacon 1 (12-inch) prepared pizza crust 8 eggs, beaten 1/4 teaspoon ground black pepper 3/4 cup PaceŽ Picante Sauce 1/2 cup shredded Cheddar cheese (about 2 ounces) 2 tablespoons chopped fresh cilantro leaves

Directions:1. Heat the oven to 400°F.
2. Heat the butter in a 10-inch skillet over medium heat. Add the onion, pepper and bacon and cook until the vegetables are tender.
3. Place the pizza crust onto a pizza pan or baking sheet. Place in the oven to warm.
4. Stir the eggs and black pepper in the skillet. Cook and stir until the eggs are set. Spoon the egg mixture onto the pizza crust. Top with the picante sauce. Sprinkle with the cheese.
5. Bake for 5 minutes or until the cheese is melted. Sprinkle with the cilantro. Cut the pizza into 6 slices. |

Notes: Everyone loves pizza! This is a breakfast that is a crowd pleaser. You can omit the Cilantro if someone does not like the taste of this herb. A tip: I usually go to the local pizzeria and buy their pizza dough the day before and keep it in the refrigerator until I am ready to make the pizza. Remember, if you do this you need to cook the pizza dough first (I cook it on a pizza stone) around 15 minutes.
