PUDDING:
2 c. soda cracker crumbs
1/2 lb. American cheese, grated
4 hard-boiled eggs, grated
1 jar (7 oz.) pimento, grated
2 c. medium white sauce
buttered crumbs
WHITE SAUCE:
2 T. flour
2 c. milk
1 T. butter

Directions:
Directions:
Preheat oven to 350 degrees F. PUDDING: In a casserole dish, place a layer of crumbs, grated cheese, eggs, and pimentos. Cover with white sauce. Repeat layers. Top with buttered crumbs. Bake for 30 minutes. WHITE SAUCE: Cook flour, milk and butter over medium heat until slightly thickened.

In the 30's when the Wimsetts were proprietors of the Lynn Hotel located in Hodgenville, Kentucky, this dish was served every Sunday. In 1954 when President Eisenhower was served cheese pudding at the Hodgenville Women's Club, he asked for a second helping and the recipe.
