Ingredients: -1 lime or lemon, juice of (I used 1 lime) -1 tbsp extra virgin olive oil (the recipe called for 1/2 cup but you don't need it) -1 tbsp melted butter (the recipe called for 1/2 cup but you don't need it) -2 shallots, thinly sliced -3 garlic cloves, thinly sliced -3 tbsp capers -1 tsp seasoned salt, plus more -3/4 tsp ground black pepper -1 tsp ground cumin -1 tsp garlic powder -1.5 lb Sole fillet (10-12 thin fillets) (I used Tilapia) -4-6 green onions, top trimmed, halved length-wise (I used more and then chopped some up also) -1 lime or lemon, sliced (optional--I used sliced lime) -3/4 cup roughly chopped fresh dill for garnish (I completely forgot to add dill but it tasted amazing anyway)

Directions:-In a small bowl, whisk together lime juice, olive oil, and melted butter with a dash of seasoned salt. Stir in the shallots, garlic, and capers.
-In a separate small bowl, mix together the seasoned salt, pepper, cumin and garlic powder. Spice the fish fillets each on both sides.
-Place the fish fillets on a lightly-oiled large baking pan or dish. Cover with the buttery lime mixture you prepared earlier. Now arrange the green onion halves and lime slices on top.
-Bake in 375 degree oven for 10-15 minutes. Do not overcook.
-Remove the fish fillets from the oven and garnish with the chopped fresh dill. (Like I said previously, I forgot this step but it still tasted amazing so if you don't have it, it's okay). |

Notes: DON'T skimp on the seasonings. It added a lot of needed flavor to a bland fish like Tilapia.
This AMAZING recipe paired well with roasted spaghetti squash and kale cooked with shallots, white wine, and reduced-sodium chicken broth. ENJOY!
