1/2 Cup Butter
1/2 Cup Brown sugar
1 Egg - separate white from yolk
1/2 teaspoon Vanilla
1 Cup Flour - sifted
1/2 teaspoon Salt
3/4 Cup Chopped Walnuts
Raspberry and Mint Jelly for filling the cookie (Red and Green for Christmas)

Mix together shortening, sugar, egg yolk, vanilla. Blend in flour, salt; make into balls; dip in slightly beaten egg white, then roll in nuts; bake at 350 degrees, 5-8 minutes. As soon as cookies are done, press thumbprint into cookie and let cool. (Grandma Nedostup used to use the back of a wooden clothes pin to press into the cookie rather than a thumbprint) Let cool completely on a wire cookie rack.Fill the center with red (raspberry) and green (mint) jellies.

For a festive touch, you can also roll the unbaked cookies (after rolling in the egg whites) in green and red sugar before rolling in the walnuts.
