1 lb. ground beef
1 small or 1/2 large sweet onion, chopped
Salt and pepper to taste, optional
4 cups beef broth
4 cups water
2 (1 oz.) packages dry onion soup mix
1 (15 oz.) can petite diced tomatoes
1 (15 oz.) can tomato sauce
1 (16 oz.) package frozen mixed vegetables
3/4 c. elbow macaroni

Directions:
Directions:
In a saute pan, brown ground beef and chopped onion over medium heat. Season with salt and pepper, if desired. In a large stock pot, combine broth, water, onion mix, diced tomatoes, tomato sauce, frozen vegetables, and macaroni. Bring to a boil and then simmer until macaroni is done. Add browned ground beef, mix and serve.

Note: As is true with most soups, this one is better prepared the day before or, at least, several hours before serving. This allows the ingredients to blend better enhancing the flavor.
