1 tbsp. yeast
1 1/2 c. warm water
1 tbsp. honey
3 1/2 - 4 c. flour
1 tsp. salt
2 tbsp. oil

Directions:
Directions:
Combine yeast, 1/2 c. warm water and honey. Let sit until foamy. In a large (non-metal) bowl, mix 3 1/2 c. flour and salt; make indentation in the center. Stir 1 c. water and oil into the yeast mixture. Then, slowly pour liquids into the well of the dry ingredients and stir with a wooden spoon until a ball is formed. Place in a well-oiled bowl; cover with plastic wrap and let rise in warmth until doubled. Knead for 10 minutes on floured surface. Divide to 10 pieces, roll to balls. Cover with a towel and let sit for 10 minutes. Preheat oven as hot as it will go, or 500 F. Position oven racks on lowest position in oven. Meanwhile, with floured hands roll balls to 6 circles (not very thin). Put on ungreased cookie sheets (or sprinkle first with posho), as many fit on the one sheet. Bake for 5 minutes (until puffed up), flip, then bake for 2-3 minutes. Repeat with the rest of the dough. Let cool, and cut in half with scissors.
