Banana Bread Recipe

1 1/4 cups whole wheat flour (or white flour)
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1/2 tsp. vanilla extract
1/2 cup unsalted butter at room temperature
1 cup sugar
3 ripe bananas, peeled and mashed (about 1 cup)
1/2 cup toasted walnuts (if you want Banana NUT Bread)

Directions:
Directions:
Sift the flour, baking soda, and salt into a medium bowl. Whisk the eggs and vanilla together in a liquid measuring cup. Grease a bread pan or you can also do these as muffins. Preheat oven to 350 degrees.
Cream the butter, and sugar until light and fluffy in large bowl. Gradually pour in the egg mixture and continue mixing. Add the bananas.
With a rubber spatula, mix in the flour mixture until incorporated. If you add nuts, fold those in now. Transfer batter to your pan(s).
Bake for 55 minutes or until toothpick comes out clean. If you do muffins it'll take less time. Cool on wire rack.

I usually do a small loaf and muffins for this recipe. They whole wheat flour is a healthier option, but white flour is fine too.
