1 1/2 pounds - 2 pounds ground beef or ground bison
1 medium onion chopped fine
2 - 796 ml cans of diced tomatoes
2 cups water (or more)
1 litre beef broth
1 can tomato soup
4 carrots chopped fine
1 bay leaf
3 sticks of celery chopped fine
parsley
1/2 tsp. thyme
pepper to taste
8 tbsp. pearl barley

Brown meat and onions. Drain well. Combine all ingredients in a large pot and simmer covered at least 2 hours.

It could also be cooked in a large crock pot for 4 hours on high or 6 hours on low. Left overs freeze very well. I got this recipe from my friend Ann.
