12-15 Jumbo pasta shells
1 lb. ground beef
2 tbsp. olive oil
6 oz. baby spinach (I have used raw and frozen)
1 tsp. salt
1/4 tsp. pepper
1/8 tsp. nutmeg
1 egg
1/4 cup and then 1 cup grated mozzarella cheese
1 jar spaghetti sauce

Directions:
Directions:
Preheat oven to 350 degrees. Cook shells as directed. Drain and reserve 1/3 cup of pasta water for cooking. Cook ground beef in large skillet, and drain. Add oil, spinach, onion, garlic, and reserved pasta water and continue cooking for 10 minutes. Remove from heat. Add seasonings and blend well. Let cool. Stir in egg and 1/4 cup cheese. Pour 1 cup of the sauce in a 13x9 baking dish. Fill Jumbo shells with meat mixture, place in dish and pour remaining sauce over shells, sprinkle 1 cup mozzarella cheese over the top and cover with foil. Bake for 30 minutes.
