Ingredients: Dough: 2 pkgs. dry yeast 1/2 c. lukewarm water 1 c. shortening 1 c. sugar 1 T. salt 1 c. mashed potatoes (if leftovers, not too much milk/butter/salt in them) 4 beaten eggs 2 c. warm potato water (from boiling the potatoes) 8 c. flour
Filling: 2/3 c, softened butter 3 c. sugar 6 t. cinnamon

Directions: Dissolve yeast in water. Beat together shortening, sugar, salt and mashed potatoes. Add eggs, potato water and yeast mixture. Cover & let rise for 2 hours (or until bubbly). Add 1/2 of the flour and beat until smooth. Add the rest of the flour and beat. Cover and let rise until doubled. Roll out into 2 rectangles and spread with butter. Sprinkle with the sugar-cinnamon mixture. Roll up the rectangles the long way and cut into 12 slices each. Place on greased 9" x 13" pan. Cover and let rise until light and fluffy. Bake for 15 - 20 min at 350º - 375º. |
