3 eggs

1 cup oil

2 cups sugar

2 cups grated and puree zucchini

2 tsp. vanilla

3 cups flour

1 tsp. baking soda

1 tsp salt

1/2 tsp. baking powder

2 tsp. pumpkin spice

1 tsp mace

dash of nutmeg

Beat eggs light and fluffy

add next 4 ingredient's and beat on medium to slow speed until blended well.

Sift in dry products to mixture

mix well until blended

put into sprayed 2 loaf pans

bake at 325 for about an hour..if your in a dry climate cook with a pan of water in the oven.
