3 cups cooked mashed sweet potatoes (canned or fresh)
2 eggs
1/2 cup sugar
1 tsp vanilla extract
1 stick butter, divided
1 cup coconut
1/2 cup to 1 cup brown sugar, depending on how sweet you prefer
1 cup chopped nuts
1/3 cup flour

Directions:
Directions:
Mix mashed potatoes, eggs, white sugar and 1/2 stick of melted butter. Add vanilla. Pour into baking dish. combine coconut, brown sugar, nuts, flour and 1/2 stick of melted butter. Place the topping on the potatoes. Bake in 350-degree oven for 35 minutes.

This recipe came from the old Peach Tree Kountry Kitchen in Boerne, TX. They served it with their individual meatloaf plate. It makes a great side for Thanksgiving or any holiday.
