2 pkgs. active dry yeast
5 1/4-5 1/2 cups flour
1 cup milk
1/2 cup butter
1 cup sugar
1/2 cup mashed potatoes
3 eggs
1/4 tsp. salt

Directions:
Directions:
Combine yeast and 2 1/2 cups flour. Het together milk, butter, sugar and salt till warm. Add to dry mixture in mixing bowl; add eggs and potatoes. Beat at low speed 1/2 minute. Beat 3 minutes at high speed. Stir in remaining flour by hand. Knead 8-10 minutes till smooth and elastic. Place in greased bowl, turning once to grease sides. Cover, let rise till double about 1 1/2 hrs. Punch down. Divide dough into 2 parts. Cover and let rest 10 minutes. For each of the 2 rings, shape dough into eight 2 1/2 " balls. Place around edges of greased 9 1/2 inch round baking pans.
Let rise till light 45 minutes to 1 hr. Bake in 375 degree oven for 20-25 minutes. Remove from pans. Cool.
