1/2 lb sweet butter, at room temperature
8 oz cream cheese, at room temperature
6 large eggs
2 cups sugar
2 cups self rising flour
1 Tablespoon almond essence
1 Tablespoon Confection Sugar (to garnish)

Method:
1. In mixer cream butter, cream cheese, sugar and almond essence until smooth and fluffy.
2. In separate bowls, separate eggs. Beat yellow until fluffy.
3. Mix yellow in with sugar and butter mixture. Beat whites until stiff peaks form.
4. Fold in small amounts of whites and flour into sugar and butter mixture. Repeat until all whites and flour is incorporated into the batter. Note: Do not over mix.
5. Grease and flour bundt pan generously.
6. Bake at 350 degrees for 50 60 minutes -- let cool for 5 minutes and remove from bundt pan.

When cake is completely cool, use small sieve to sprinkle confection sugar on cake.

My entire family loves this cake....my children, my sisters and nephews and nieces! I also have shared it with many friends. I tyipcally make it around the holidays.

The recipe was given to me by my Aunt, Nalani many many years ago. It's a very simple cake to make and so very delicious!
