3/4 c. maple syrup
3 slices bread, crust removed
1 T. butter, soft
1/2 c. seedless raisins, or nuts (optional)
1/2 t. lemon rind, grated (or 1 t. lemon juice)
2 c. milk
2 eggs
pinch of salt
1/4 t. vanilla

Directions:
Directions:
Pour maple syrup in top of double boiler. Spread bread with softened butter, cut into cubes and add to maple syrup. Sprinkle the raisins and lemon peel over the top of bread. Beat together the eggs, milk, salt and vanilla. Pour over bread. DO NOT STIR. Set over boiling water, cover and cook for 1 hour. The sauce that forms under the custardy pudding should be spooned over each serving. Serve warm.
