2 lbs. Stew meat, diced (lamb or beef)
1 large Onion, chopped
1 Tsp. Salt
Tsp. Pepper
Tsp. Allspice
2-3 cubes Chicken or Beef bullion
4-5 Bay Leaves
1 head Garlic, minced
1 Can tomato paste
1 lb. Tomatoes, diced
1.5 lbs. Potatoes, cubed
1 lb. Eggplant, cubed
Vegetable oil for Frying

Directions:
Directions:
Mix meat with spices and onion. Place meat, onion, bullion and bay leaves in a pressure cooker; cover with water and cook for about 20-30 minutes or until meat is tender. Lightly salt cubed eggplant and set aside for 1 hour, or at least 15 minutes. Heat oil and fry potatoes until golden brown, place potatoes on paper towels to drain excess oil. Drain water from eggplant and fry until golden brown, place on paper towels to drain excess oil.
Remove bay leaves from stew meat and broth, remove meat and broth from pressure cooker and place in a large pot. Mix tomato paste and garlic into stew. Add potatoes and eggplant and cook, covered, on medium heat for about hour.
