Ingredients: 2 c. seedless raisins 1 c. water 1 t. baking soda 1/2 c. butter 1 c. sugar 2 eggs 1 3/4 c. flour 1/4 t. salt
Butterscotch Icing: 1/4 c. butter 1/2 c. brown sugar 1 1/2 c. conf. sugar 2 T. milk

Directions: |
Directions:In a saucepan combine raisins, water and baking soda; bring to boil. Cool to lukewarm. In large mixing bowl cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Blend in raisin mixture. Sift together flour and salt; gradually add to creamed mixture. Fill muffin cups 3/4 full. Bake at 350* for 30 - 35 minutes. Remove to rack to cool. Frost with Butterscotch Icing.
Butterscotch Icing: In saucepan combine butter and brown sugar; heat over medium heat stirring occasionally, until butter melts and mixture comes to a boil. In small mixing bowl combine conf. sugar and milk; gradually beat in butter-brown sugar mixture. Continue to beat until smooth and of spreading consistency. |
