Potato Pancakes (Makes approx. 8 Pancakes)
1 large russet potato, grated (I leave the skin on mine)
3 T. grated sweet onion
1 large egg
1/2 tsp. salt
4 T. all purpose flour
oil for frying
In a mixing bowl, combine the grated potatoes, onion, salt, egg and flour. Heat about 1/4" oil in the bottom of heavy bottom skillet over medium high heat. Drop the potato mixture by spoonful's into the pan and spread out a little. Reduce the heat to medium and fry for 3-4 minutes per side until golden brown. Drain on a paper towel. Serve with applesauce, sour cream or as I like them...just plain ole ketchup.
