2 tsp. olive oil
1/2 lb. lean ground beef
1 large green bell pepper, finely chopped
1 medium onion, finely chopped
3 garlic cloves, minced
2 16-oz. cans whole tomatoes in tomato puree
2 T. tomato paste
1 bay leaf
1 tsp. basil
1 tsp. oregano
1/2 tsp. salt
1/4 tsp. black pepper
1/2 lb. bow tie pasta
1/2 c. shredded part-skim mozzarella cheese

In large skillet, warm oil over medium heat. Crumble in the ground beef and cook until meat is no longer pink, about 5 minutes. Add the tomatoes, breaking them up with the back of a spoon. Stir in the tomato paste, bay leaf, basil, oregano, salt and black pepper. Increase the heat to medium high and bring the mixture to a boil. Reduce heat to medium-low, cover and simmer until sauce thickens, 15-20 minutes. Meanwhile cook pasta according to package directions. Drain the pasta and transfer to a large serving bowl. Remove and discard the bay leaf from the sauce. Pour sauce over the pasta and toss to combine. Top with mozzarella and serve hot.
