2 eggs, beaten
1/4 cup milk
2 cups grated raw potatoes
1 tbl. grated onion
3 tbl flour
1 tsp salt
pepper

Directions:
Directions:
Combine beaten eggs and milk in bowl. Grate, grind or shred potatoes and add to egg-milk mixture as soon as each cupful is prepared. Use only the pulp of the potato, not the liquid. Add onion, flour, salt and pepper; mix well. Drop by tablespoonfuls onto hot lightly greased griddle or fry pan. Stir the mixture before dropping each pancake. Cook the cakes slowly until they are well browned. Turn and brown the other side. Makes 1-1/2 dozen about 3 inches in diameter
