of a loaf pound cake (or other cake of your choice)

cup pineapple juice

teaspoon vanilla extract

1 8 ounce container whipped topping

2 tablespoons powdered sugar

1 ripe pineapple, peeled and cut into inch pieces

Fresh fruit, such as sliced kiwi, raspberries, strawberries, peaches, etc.

In a medium mixing bowl, toss cake cubes with half of the pineapple juice and vanilla extract. In a small mixing bowl combine remaining extract, pineapple juice, whipped cream and powdered sugar.

For each serving, place a few cake cubes into the bottom of a parfait glass followed by about 1 tablespoon ship cream mixture. Add a layer of pineapple. Repeat until glass is full. Repeat with 3 more glasses. Cover and chill for up to one hour. If desired, garnish with additional fruit (strawberries, etc).
