1 to 2 lb. ground beef, cooked and drained
1 (14 oz.) can stewed tomatoes
1 or 2 cans corn, partially drained
2 pkg. taco seasoning mix
1/2 green pepper, diced (optional)
2 boxes Jiffy Cornbread Mix

Directions:
Directions:
Mix the first five ingredients together; simmer. While simmering, mix together cornbread mix according to box directions. Pour simmered ingredients into a 9x13 baking dish. Pour cornbread on top. Bake at 350 until cornbread is done.

This recipe is from Belinda Higginson. I sometimes use Rotel instead of the tomatoes and peppers. Can also top with cheese, sour cream or any other "taco" toppings you like.
