Dressing
1/4 c. olive oil
Juice of 2 limes
1/3 c. chopped cilantro
1 tsp. cumin
Salt and pepper to taste

Salad
19 oz. tin black beans, drained and rinsed
1 red bell pepper, diced
12 oz. tin kernel corn, drained
1/2 c. red onion, chopped
1 jalapeno pepper, seeded and minced ( I wear disposable rubber gloves when handling the Jalapeno)

Directions:
Directions:
Whisk oil and lime juice together in medium bowl.
Add cilantro, cumin, salt and pepper.
Mix well.
Stir in salad ingredients and adjust seasoning to taste.
Serve at room temperature.
