Cut chicken into thin strips. On mediuim-high heat, warm a large skillet and add oil then chicken. Cook until browned, stir and flip chicken and then cook until done, aprox 5-10 mins total.
While chicken is cooking- combine the pineapple chuncks WITH sauce, soy sauce, honey, ginger and garlic in a bowl and whisk to combine.
Slice peppers into strips.
Once chicken is cooked, add pineapple mixture to pain and turn up to high heat.
Boil for about 5 minutes.
Add peppers and broccoli, stir it all together and continue to cook until crisp- aprox 5-7 more minutes.
Use a slotted spoon to remove chicken, pineapple and veggies and transfer into serving bowl.
Combine corn starch and 1 tablespoon water in a small bowl and stir well. Pour into pan. Stir to combine and cook until it thickens to syrup-like consistency. This only takes a couple minutes at most.
Before serving, pour syrup like sauce over chicken mix.
Optional: garnish with sesame seeds. (I never have them in the house)
