1 lb lean sausage (Owens breakfast)
3 Cans Black-eyed peas
1 Can Mild Rotel
1 Small Can diced tomatoes
1 clove garlic diced (or 1tsp garlic powder)
1 small onion diced

In a 5 qt. pan; Brown and drain meat - break apart into small ground pcs
add garlic and onion - saute
add remaining ingredients and simmer 15 to 20 minutes.
