1 cup dried bow tie pasta

2 cloves minced garlic

1 tablespoon olive oil

2 medium green tomatoes, coarsely chopped into one inch chunks

1 cup whipping cream

2 tablespoons snipped fresh Italian parsley

teaspoon pepper

1/3 cup finely shredded Parmesan cheese

1 ounce thinly sliced prosciutto or ham, chopped

Cook pasta according to package directions. Drain and keep warm. Meanwhile, in a large skillet cook garlic in hot oil over medium high heat for 30 seconds. Add green tomatoes. Cook 3 to 4 minutes or until heated though, stirring often. Stir whipping cream, parsley, and pepper into tomato mixture. Cook over medium heat for 5 to 8 minutes or until slightly thickened, stirring occasionally. Remove from the heat.

Stir the 1/3 cup Parmesan cheese and the prosciutto or am into sauce. Serve sauce over pasta. If desired, top with additional Parmesan cheese.
