1 32 oz. pkg. shredded frozen potatoes
1/2 c. melted butter
1 can Cream of Chicken soup, undiluted
12 oz. grated American cheese (or use cheese of choice - we like Cheddar/Colby Jack mix)
1 8 oz. carton sour cream
1 tsp. salt (optional - I don't use)
1/2 small onion, chopped (optional - I don't use)
2 c. crushed cornflakes
1/2 c. melted butter

Directions:
Directions:
Thaw potatoes and break apart. Mix together next 6 ingredients and pour over potatoes. Mix all together. Top with crushed cornflakes and drizzle melted butter over all. Bake uncovered at 350º for 45 minutes.

Note: Can be made ahead and refrigerated or frozen, but don't add the cornflakes and butter on top until you're ready to cook it.
