2 medium chopped onions
2 stock of celery chopped
2 tbsp. vegetables oil
1 cup chicken broth
1 cup of milk
2 tsp. thyme
3 cups cooked turkey diced ( left over turkey )
1/4 cup flour
3 cups mixed vegetables
5 medium potatoes..make them into mashed potatoes adding enough milk to make smooth

Directions:

Preheat oven to 400º Saute the oil with the onion, celery, thyme until soft. Stir in flour and continue to cook stirring constantly over low heat for five minutes. Stir in the stock and milk. Bring to a boil. Reduce the heat and simmer uncovered stirring until thickened. Stir in the turkey and the mixed vegetables. Add salt and pepper to taste. Pour into a large casserole or glass baking dish. Top with the mashed potatoes over the other ingredients and bake for 30-35 minutes until hot and bubbly. Enjoy
