Beef shank
¾ - 1 cup flour
3 Tbsp. thyme – Powdered Thyme !
Dutch rusks or bread crumbs
3 Tbsp. soya sauce
Oil
½ cup butter or margarine

Directions:
Directions:
Boil or pressure cook meat until tender and falls off the bone. Save stock and add beef bouillon to taste. Grind meat and cool.
In a large pot melt ½ cup butter over medium heat. Add ¾ cup flour until pasty brown. Add stock slowly. Add thyme and soya sauce. (Season on the heavy side as it will mellow when the meat is reintroduced to the pot) Reduce heat to low. Stir in meat. Put on plates and leave in fridge overnight.
Roll into croquette shapes and dredge in egg/milk mixture then in bread crumbs (rusks). Repeat and dredge in egg/milk mixture then in bread crumbs a second time.
Deep fry until cooked in the center.

Serve with SESAME STEAK SAUCE

¾ cup Soya sauce 1 cup vegetable oil
½ cup toasted sesame seeds 1 egg yolk
½ tsp dry mustard 1 garlic clove minced
½ chopped onion ½ cup whipped cream
