3/4 cup all purpose flour
1 cup bread flour
1 tsp baking soda
1 3/4 tsp salt (use 1 tsp if you use salted butter)

1 cup (2 sticks) unsalted butter (or 1/2 cup butter and 1/2 cup ghee)
1/2 cup white sugar
1 cup dark brown sugar (best: 1 cup sugar and 1 Tbsp molasses)
1 Tbsp vanilla extract
1 Tbsp espresso powder
2 eggs (1 whole and 1 yolk)

1/2 cup semi-sweet chocolate chips
4 oz Ghirardelli baking chocolate (60% cacao), roughly chopped

Combine flours, baking soda, and salt in a small bowl. Set aside.

Cream butter, sugars, vanilla, and espresso powder until fluffy. Stir in 1 egg and 1 yolk.

Add dry ingredients to the wet until combined. Stir in chocolate. Cover and refrigerate for 1 hour.

Shape into balls and arrange on ungreased cookie sheet. Bake at 375º for 13 minutes.
Remove from oven and gently press in each cookie from all sides with 2 spoons. This will create a nice bumpy cookie. Then, bake 2 more minutes.

Variation:
Melt butter until nutty brown. Pour into measuring cup and cool 1-2 minutes. Add 1-2 Tbsp water to measure exactly 1 cup. Cool to room temperature. Continue with adding the sugars.
