Beef Roast Drippings if available - otherwise use Oil
1 cup (5 large) Eggs (room temp)
1 cup Milk
1 cup Flour
Pinch of Salt

Directions:
Directions:
Heat oven to 450º F.
Put 1/2 tsp of roast dripping (preferred) or oil in 12 muffin tins.
Pop in oven. (put on cookie sheet as they spatter).
Beat eggs, milk & flour (and pinch of salt) together.
Pour 2/3 full into hot muffin tins (put cookie sheet under again).
Cook for 15 minutes then reduce heat to 350º F for 10 - 15 minutes.
(If they are brown before - turn oven off & leave them to finish).
Otherwise, when browned - turn oven off and leave to finish.
