b1 tbsp butter
1 small onion
1 c red wine
1 oz dark or semi sweet chocolate
juice from roasted beef tenderloin


Melt butter and add the finely diced onions and caramelize for about 3 min. Then add red wine and juice form your tenderloin Bring to a simmer and add the chocolate. season with some salt and pepper, add more beef juice , let thicken and reduce for about half of what you had.

This is a sauce from Chef Aldo which was delicious with the beef tenderloin
